Tofu, Jam & Tahini Salad Dressing

 
We went back to GK Organic Farm today for another tour and another delectable organic lunch. It was so yummy that I had a 2nd big helping of the salad and  sweet potatoes. The chef there shared his own creation of salad dressing during my last trip there and I wanna make it for mom to try it out. So here's the ingredients to make the dressing:
These are the ingredients. Too lazy to run up to get the camera so the hp's quality will do.
 
1 packet of soft tofu
Tahini (1 put in 1 big tbsp)
Lemon Juice (freshly squeeze or bottled)
Organic Pineapple jam (or any other organic jam)
A little olive oil.
A little water
Honey
 
The finished dressing : tofu + pineapple jam + roselle + honey + tahini + lemon juice
 


I threw in everything in my food processor except the olive oil in which I added in upon serving of the salad. The measurement were deliberately left out because you can whip up your own dressing according to your preference. For me, I like it sweeter with a hint of citrus. Therefore, I was generous with the amount of lemon juice as well as honey and pineapple jam. Since I bought roselle this morning, I added some of the roselle into the blending as well. Yup... it became my own salad creation  :D  It would be fab to add in some fruit slices but since I had none, I replaced it with roselle and jumbo raisins. Mom wasn't too ecstatic over the dressing. Dad has no comment while hubby prefer caesar and thousand island over my dressing. It seems like I was the only one enjoying this healthy bit of homemade dressing.

Dad whom is not a regular vegan person, just couldn't stand another meal without any rice or meat. Hence, mom used leftover rice to fried some really tasty yet simple fried rice for him.

Salad + tropical fruits = dinner


It's been a long while since we last ate salad. The rain has been wrecking our plans to ride (meaning no calories burn) while our bellies are growing larger with each passing day. So we made a pledge to eat solely fruits and vegetables for dinner for this entire week. The dressing used was mustard grain and I thought it tasted a bit ..... weird. It certainly didnt' taste weird when my neighbour whipped up her fantastic salad with the same dressing, plus some vinegar and crushed garlic. The papaya and rambutans compliment my salad very much by giving a sweet taste to it. Oh.. in case if you're wondering, yea...the 'white flesh' in the remekin is rambutan. I don't eat it straight from the seed but instead, slice the flesh out and eat it with a fork. I thought it's one hell of an enjoyment to eat it this way coz I avoid eating the fine skin that comes off from the seed.

Caesar Salad with Bacon crisp & croutons


The romaine lettuce has been in my fridge for the past 5 days. I deduce that I have to make it for dinner tonight, otherwise its final destination will be the garbage bin instead of mine and hubby's stomach. I've tried all sorts of caesar dressing brand before but Lady's Choice remains as my favorite. One thing about my way of caesar salad is that bacon is definitely an inevitable ingredient. The salad will not taste nice without the bacon crisp which I prefer to fry it to crisp or near crisp. As for the croutons, I usually opt for Pepperidge Farm brand which comes in several different variants and bigger cut. My favorite variant will be either the garlic or the italian herbs. While washing the romaine lettuce, I heated the pan up to fry the bacon which hardly needs any attending. By the time bacon was done, so was the washing. The remaining part was easy : pour in the dressing, throw in the bacon, stir them evenly on the lettuce and lastly, top it up with croutons. Dinner's ready.

Garlic Pork Ham Slice Sandwich


Hubby and I both love munching healthy sandwiches from the notable O'Briens, Subway and some other nameless sandwich outlet which deliver equally satisfying taste. However, nothing beats preparing one yourself with your preferred type of bread and ingredients. During lunch hour, I popped over to Jaya Grocery to buy some medium cut slices of garlic pork ham , a loaf of healthy soya bread and a box of alfalfa. That was the dinner for last night and my lunch a while ago. I slab some mayo on the bread, top it up with the ham, followed by alfalfa, then many pieces of lettuce, top it up with slices of tomatoes and cucumber, more mayo and chili sauce, some alfalfa again and lastly another 2 slices of ham before I close it up with the bread. The outcome was a very 'tall' sandwhich which my mouth could hardly open up to its size. And when you bite into it, the dressing and chili sauce just oozes out. Superb. It tasted just marvellicious (marvellous + delicious) and I can't wait to do it again tonight but this time, it will be with the black pepper ham instead.
